Ashford Castle

Alexander Jaromin is the baker at The Lodge at Ashford Castle.

In his words:

I’m a chef and started my journey with breads just 2 years ago. I learned most by myself reading books and following people better than me. With help of fantastic baker – Jeremy from Jeremiche, I decided to start working with sourdough bread. Mostly rye or spelt. My big passion is actually foraging. It’s working perfectly with my bread making role. 

I’m making on this stage 5 different breads:

– sourdough, always working to make better and better

– forager’s bread rolls

– savoury wild mushroom danish bread

– brioche

and one not real bread due to customer demand  🙂  – seed brown soda bread
