Robert Meyer is the person behind Holy Bagels in Limerick and in his words:
Holy bagels make traditional hand rolled wood fired fired bagels. This concept is based on the Montreal style bagels which differ in a number of ways to the New york style. For instance each bagel is individually hand rolled, baked in a wood fire oven and sugar is added to the dough for sweetness. The New york stlye are in an industrial bagels machines, baked in a conventional ovens and salt is added to the dough.
