Vitor used to bake with one of our members in Dublin and now has his own bakery in Kildare. In his own words
My name is Vitor I’m a Brazilian baker and chef living in Ireland for almost 10 years, and sourdough has been my passion for over a decade. I bake from a small artisan bakery at home in Newbridge, where everything is done by hand, in small batches, with care and patience.
My breads are naturally fermented for about 48 hours no commercial yeast, no additives and no shortcuts. Just flour, water, salt and time. This slow process develops flavour, improves digestibility and creates that light, open crumb and golden crust that people love.
I currently bake three signature sourdough loaves:
Rustic Multiseed Sourdough — packed with seeds and full of flavour.
Rustic White Sourdough — soft crumb, balanced tang, golden crust.
Rustic Wholemeal Sourdough — rich, nutty and nourishing.
What I tell customers is simple:
I make real bread
the way bread should be.
Slowly fermented, thoughtfully crafted and baked with passion.

Orders are open every week and all breads and sweet buns are baked fresh on Saturdays.

I currently operate as a small-batch artisan micro-bakery with no stockists or market stalls for now everything is made to order to ensure maximum freshness, quality and zero waste.
However, I am planning to attend local markets and collaborate with cafés in the near future as my production grows.
