Brendan Coghlan is the founder of this bakery which supplies Dunnes Stores with their sourdough loaves.

Our 100% all natural yeast free organic sourdough is made using
organic flour  sourced from specially selected blend of Belgian & Ukrainian wheat , organic salt ,water & time.
Our sourdough is refreshed everyday using our bespoke 20 hour fermentation process plus a five hour bulk fermentation time then onto 16 hour cold fermentation proof.
Then baked in biomass thermal oil deck oven with heat recovery system for heating water giving us a carbon neutral baking process.
