In the words of David Foskin, one of the two founders behind this bakery in Waterford

Silvia and I started our business as a micro bakery in 2020 as a way to provide fresh bread and pastries to those who were unable to get to shops themselves. We have grown from being a delivery-only affair, to markets, to owning a food truck – now we can finally say that we have our own bakery in the heart of Waterford city at 58 Barrack Street. 

We order all of our flour from Kells and other local growers when they have stock available. The most important aspect of our sourdough is that it’s made over the course of two days, using only flour, water and salt. And yes, we still call our sourdough starter Clint Yeastwood!
