Thibault Peigne, a Frenchman, grew up in Western Brittany, in the fishing village of Douarnenez, where his family own the oldest canned fish factory in the world, Connetable, renowned for its hand-prepared sardines.
Thibault, a bread purist, is dedicated to producing high-quality organic breads. We use stoneground organic flour, water, sea salt and in some loaves a little yeast, to balance the activity of the ferments.
